The Wine
Ripe fresh cassis and herb aromas are backed up by the dense rich blueberry fruit and chocolate flavours on the palate. Fine yet restrained tannins give the wine a robust yet elegant texture. Enjoy now or cellar for up to 15 years.

Winemaking
Fermented in small open fermenters until dry the wine was hand plunged 3 times daily before subtle influence of French oak. Prior to bottling 10% Merlot was added to give the wine some complexity and depth.

Viticulture
Sourced from a single vineyard in the cooler micro-climate of the upper King Valley above Cheshunt. The grapes were grown on a double wire trellising system that evenly separates the bunches and allows maximum exposure to the sun. The trick to making an exceptional Cabernet from the King Valley is to harvest the fruit at its optimum flavour, i.e ripe berry flavours as opposed to the green herbaceous flavours that can be evident in cooler climates. The vineyard was assessed twice a week prior to harvesting.
