The fruit was crushed and de-stemmed, chilled, and the free-run and very gentle juice pressings were separated, settled overnight and the clean juice fermented to dryness in stainless steel, at approximately 12 degrees Celsius, using a specially selected aromatic yeast.
Sourced from a single vinyard from a Myrrhee vinyard, this little rascal continues to impress me. Delicate in appearance yet powerful in structure.
