Sourced from a single vineyard in the King Valley. This wine displays classic cool climate white pepper and spice flavours were evident in the vineyard prior to being picked. Gentle plunging and minimal handling of the wine have resulted in a soft juicy blackcurrant mid-palate that is balanced well with the subtle use of new French oak. A wine style to be enjoyed over a meal and conversation which will continue to improve over the next 10 years and beyond
Fermented at 25 - 28c, daily rack and returns to increase the oxygen contact during the peak period of fermentation. Extended skin contact of 14 days to soften and define the tannin structure of the palate 12% Saperavi was added to the wine prior to bottling this added to intensity of flavour and colour.
Our Shiraz was sourced from a single vineyard in the picturesque Myrrhee valley. This sub-region of the King Valley is unique for its red volcanic soils and its amphitheatre like micro-climate that exposes the vines to the early morning sun but protects the fruit from the hot afternoon heat. The fruit from this region of the King Valley typically displays exceptional freshness and varietal fruit characteristics. Single wire trellising, low cropping level and a dry ripening season allowed the grapes to mature to their optimum ripeness.
